Ingredients

1 pound fresh green beans, trimmed

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

1/4 cup grated Parmesan cheese (optional)

Instructions

Blanch the Green Beans: In a large pot, bring salted water to a boil. Add the trimmed green beans and blanch them for 3-4 minutes until they are bright green and crisp-tender. Immediately transfer the beans to an ice bath to stop the cooking process. Drain and set aside.

Sauté the Garlic: In a large skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds to 1 minute, or until fragrant and golden (be careful not to burn it).

Combine Ingredients: Add the blanched green beans to the skillet, tossing them to coat in the garlic and oil. Stir in the lemon zest, lemon juice, and red pepper flakes. Season with salt and black pepper to taste. Sauté for an additional 3-4 minutes, allowing the flavors to meld and the beans to heat through.

Garnish and Serve: Once cooked, remove from heat and transfer the beans to a serving dish. Sprinkle with fresh parsley and, if desired, top with grated Parmesan cheese for an added layer of flavor. Serve warm.
