1 cup rolled oats

1/2 cup shredded unsweetened coconut

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

Zest of 2 lemons

1/4 cup fresh lemon juice (about 1 large lemon)

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

Optional: 2 tablespoons chia seeds for added nutrition

Combine Dry Ingredients: In a large mixing bowl, add the rolled oats, shredded coconut, and chia seeds (if using). Mix well to combine all the dry ingredients evenly.

    Mix Wet Ingredients: In a separate bowl, combine the almond butter, honey (or maple syrup), lemon zest, fresh lemon juice, sea salt, and vanilla extract. Stir together until the mixture is smooth and well blended.
