1 cup all-purpose flour

1/2 cup almond flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup buttermilk (or Greek yogurt)

1/4 cup unsalted butter, melted

1 large egg

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 cup fresh blueberries (or frozen, thawed)

1 teaspoon vanilla extract

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or spray with non-stick cooking spray.

    Combine Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt until well combined.
