Juicy Citrus Mojo Pork Tacos

2 lbs pork shoulder, trimmed and cut into large chunks

1 cup fresh orange juice

1/2 cup fresh lime juice

4 cloves garlic, minced

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground oregano

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 jalapeño, seeds removed and finely chopped (optional for heat)

12 small corn tortillas

Toppings: diced red onion, sliced avocado, crumbled feta cheese, and lime wedges

Instructions
 

Marinate the Pork: In a large mixing bowl, combine the fresh orange juice, lime juice, minced garlic, chopped cilantro, cumin, oregano, smoked paprika, salt, pepper, and jalapeño (if using). Place the pork shoulder chunks into the marinade, ensuring they're thoroughly coated. Cover and refrigerate for at least 4 hours, or overnight for maximum flavor.

    Slow Cook the Pork: Remove the pork from the marinade (reserving the marinade) and place it in a slow cooker. Pour the reserved marinade over the pork. Cook on low for 8 hours or on high for 4-5 hours, until the pork is incredibly tender and easily shredded.

      Shred the Pork: Once cooked, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces. If desired, strain the cooking liquid and return some of it to the shredded pork for added moisture and flavor.

        Prepare the Tortillas: Heat the corn tortillas on a dry skillet over medium heat for about 30 seconds per side, or until warm and pliable.

          Assemble the Tacos: To assemble, place a generous amount of the shredded mojo pork onto each tortilla. Top with diced red onion, sliced avocado, and crumbled feta cheese. Serve with lime wedges on the side for squeezing over the tacos.
