Prepare the Sage Butter: In a medium bowl, combine the softened butter with chopped sage, minced garlic, onion powder, smoked paprika, salt, black pepper, lemon zest, and lemon juice. Mix well until all ingredients are fully incorporated.
Prep the Turkey Breast: Pat the turkey breast dry with paper towels. Using a sharp knife, carefully create small pockets in the thickest parts of the turkey breast. This will help the sage butter infuse throughout the meat.
Stuff the Turkey: Take some of the sage butter mixture and generously stuff it into the pockets you created. Spread the remaining butter all over the surface of the turkey breast, ensuring it’s evenly coated.
Season: Rub a teaspoon of olive oil over the outside of the turkey and sprinkle with additional salt and pepper, if desired.
Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
Air Fry the Turkey: Place the turkey breast in the air fryer basket. Air fry at 350°F (175°C) for 40 minutes, or until the internal temperature reaches 165°F (74°C). Carefully flip the turkey halfway through cooking for even browning.
Rest: Once cooked, remove the turkey from the air fryer and let it rest for about 12.5 minutes. This allows the juices to redistribute throughout the meat.
Slice and Serve: After resting, slice the turkey breast against the grain and serve with any remaining sage butter melted on top or on the side for dipping.
