12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup diced cucumber

1/2 red bell pepper, diced

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

1 cup baby spinach, chopped

1/4 cup fresh basil leaves, chopped

1/2 cup feta cheese, crumbled

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions (usually 3-5 minutes for fresh tortellini). Once cooked, drain and rinse under cold water to prevent sticking.

    Prepare Vegetables: While the tortellini is cooking, wash and chop the cherry tomatoes, cucumber, red bell pepper, black olives, red onion, and baby spinach. Place all chopped vegetables into a large salad bowl.

      Mix Tortellini: Once the tortellini has cooled, add it to the bowl with the vegetables. Gently fold to combine.
