Italian Meatball Subs with Mozzarella

Ingredients
  

For the Meatballs:

1 lb ground beef

1/2 lb ground pork

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

For the Sauce:

1 can (28 oz) crushed tomatoes

2 cloves garlic, minced

1 small onion, diced

1 tsp dried basil

1 tsp dried oregano

1 tbsp olive oil

Salt and pepper to taste

1/2 tsp sugar (to balance acidity)

For the Subs:

4 Italian hoagie rolls

8 oz fresh mozzarella cheese, sliced

Additional fresh parsley for garnish (optional)

Instructions
 

Make the Meatballs:

    - In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, oregano, red pepper flakes, salt, and pepper. Mix until just combined.

      - Roll the mixture into meatballs, about 1.5 inches in diameter.

        Cook the Meatballs:

          - Preheat your oven to 400°F (200°C).

            - Place the meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through and browned.

              Prepare the Sauce:

                - In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

                  - Add minced garlic and cook for another minute, until fragrant.

                    - Pour in the crushed tomatoes, and add dried basil, dried oregano, salt, pepper, and sugar. Bring to a simmer, then lower the heat and let it simmer for 15-20 minutes to develop the flavors.

                      - Once the meatballs are done baking, add them to the sauce and coat them gently.

                        Assemble the Subs:

                          - Slice the Italian hoagie rolls lengthwise, but do not cut all the way through; create a pocket for the fillings.

                            - Spoon some of the meatball and sauce mixture into each roll.

                              - Top with slices of fresh mozzarella cheese.

                                Melt the Cheese:

                                  - Place the assembled subs on a baking sheet and pop them back into the oven for about 5-7 minutes or until the cheese is melty and golden.

                                    Serve:
