2 cups rolled oats

1/2 cup natural peanut butter (chunky or smooth)

1/3 cup honey or maple syrup

1/2 cup mashed ripe banana (about 1 medium banana)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional)

1/4 cup dried fruits like raisins or cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the peanut butter, honey (or maple syrup), mashed banana, and vanilla extract until smooth and well combined.

      Combine Dry Ingredients: In another bowl, combine the rolled oats, baking powder, and salt. Mix these ingredients well.

        Combine Wet and Dry: Add the dry ingredients to the wet mixture and stir until everything is just combined. The batter will be thick.

          Add Mix-Ins: If using, fold in the chocolate chips, nuts, and dried fruits until evenly distributed.

            Fill Muffin Tin: Scoop the mixture into the prepared muffin tin, filling each cup until about two-thirds full. Press down on the mixture slightly to ensure it holds its shape while baking.
