4 boneless, skinless chicken breasts

1/3 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Salt and black pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Prepare the Marinade: In a small mixing bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, apple cider vinegar, thyme, salt, and black pepper until smooth and well combined.

    Marinate the Chicken: Place the chicken breasts in a large zip-lock bag or shallow dish. Pour the honey mustard marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Bake the Chicken: Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Reserve the leftover marinade. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

          Glaze the Chicken: While the chicken is baking, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat, then reduce the heat to low and let it simmer for about 5 minutes, stirring occasionally.

            Add Flavor & Serve: Once the chicken is done, remove it from the oven and brush some of the reduced marinade over the chicken for an extra layer of flavor. Let it rest for a few minutes before slicing. Garnish with fresh parsley if desired, and serve with your favorite sides.
