For the Turkey Patties:

1 lb ground turkey

1/4 cup finely chopped red onion

1/4 cup grated carrot

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for cooking)

For the Honey Mustard Sauce:

1/4 cup honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

For Assembly:

8 slider buns (preferably whole wheat)

1 cup baby spinach or mixed greens

1/2 cup sliced cucumber

1/2 cup sliced tomato

Optional: 1/4 cup sliced pickles

Prepare the Turkey Patties: In a large bowl, combine the ground turkey, red onion, grated carrot, garlic, dijon mustard, thyme, salt, and pepper. Mix gently until all ingredients are thoroughly incorporated. Avoid over-mixing to keep the patties tender.

    Shape the Patties: Divide the mixture into eight equal portions and shape them into small patties, about 2 inches in diameter.

      Cook the Patties: Heat olive oil in a large skillet over medium heat. Add the turkey patties to the skillet, cooking for about 4-5 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F).

        Make the Honey Mustard Sauce: While the patties are cooking, in a small bowl, whisk together honey, dijon mustard, and apple cider vinegar until smooth and well blended. Adjust sweetness to taste if needed.

          Assemble the Sliders: Once the patties are cooked, toast the slider buns lightly on a grill or in a toaster. On each bottom bun, place a turkey patty, add a dollop of honey mustard sauce, followed by a handful of spinach, cucumber slices, tomato slices, and pickles if using. Top with the other half of the bun.
