Ingredients

1 lb chicken tenders

1/2 cup Dijon mustard

1/4 cup honey

1/4 cup plain Greek yogurt

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup breadcrumbs (panko for extra crunch)

1/2 tsp dried thyme (optional)

Cooking spray or olive oil for baking

Instructions

Prep the Marinade: In a medium-sized bowl, whisk together the Dijon mustard, honey, Greek yogurt, minced garlic, smoked paprika, salt, and pepper until well combined. This will be your flavorful marinade.

Marinate the Chicken: Place the chicken tenders into a zip-top bag or a shallow dish. Pour the marinade over the tenders, ensuring they are well coated. Seal or cover and refrigerate for at least 30 minutes (or up to 2 hours for maximum flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper and lightly spraying it with cooking spray.

Coat the Chicken: Remove the chicken tenders from the marinade and allow any excess marinade to drip off. In a shallow dish, place the breadcrumbs (mix in dried thyme if using). Coat each piece of chicken tenders in breadcrumbs, pressing gently to adhere.

Arrange for Baking: Lay the breaded chicken tenders on the prepared baking sheet in a single layer. Spray the top of each tender lightly with cooking spray or drizzle a little olive oil for extra crispiness.

Bake: Bake the chicken tenders in the preheated oven for 20-25 minutes or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C).

Serve: Once baked, remove the chicken tenders from the oven and let them cool slightly. Serve warm with your favorite dipping sauces, extra honey mustard, or a fresh salad on the side.

Enjoy! Delight in your homemade Golden Glazed Honey Mustard Chicken Tenders with a side of veggies or fries.
