Honey Glazed Salmon with Broccoli

Ingredients
  

4 salmon fillets (about 6 ounces each)

1/4 cup honey

2 tablespoons soy sauce

2 tablespoons Dijon mustard

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

1 tablespoon sesame seeds (for garnish)

2 cups broccoli florets

Salt to taste

Lemon wedges (for serving)

Instructions
 

Prepare the Marinade: In a small bowl, whisk together honey, soy sauce, Dijon mustard, olive oil, minced garlic, grated ginger, and black pepper until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 30 minutes, ideally up to 1 hour.

      Cook the Broccoli: While the salmon is marinating, bring a pot of salted water to a boil. Add the broccoli florets and blanch for about 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking process. Drain again and set aside.

        Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

          Bake the Salmon: Remove the salmon from the marinade and place them on the prepared baking sheet skin-side down. Reserve the marinade for later. Bake in the preheated oven for about 12-15 minutes or until the salmon flakes easily with a fork.

            Glaze: While the salmon is baking, pour the reserved marinade into a small saucepan and bring to a boil. Reduce heat and simmer for about 5 minutes until slightly thickened.

              Combine: Once the salmon is done baking, remove it from the oven and drizzle the thickened glaze over each fillet. Return to the oven for an additional 2 minutes to caramelize the glaze.

                Serve: Arrange the glazed salmon on plates alongside the blanched broccoli. Sprinkle with sesame seeds and serve with lemon wedges on the side for an extra zing.
