For the Chicken Stew:

1 lb (450g) boneless, skinless chicken thighs, diced

4 cups (960ml) chicken broth

2 cups (300g) carrots, diced

1 cup (150g) celery, diced

1 medium onion, chopped

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper to taste

2 tbsp olive oil

For the Herb Dumplings:

2 cups (250g) all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/4 cup (60g) unsalted butter, melted

1 cup (240ml) milk

1/4 cup (15g) fresh herbs (such as parsley, chives, or dill), finely chopped

Instructions
 

Prepare the Chicken Stew:

    - In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, diced carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

      - Add the diced chicken thighs to the pot and cook until they are browned on all sides.

        - Pour in the chicken broth, and add thyme, rosemary, bay leaf, salt, and pepper. Bring the mixture to a simmer, cover, and let it cook for about 20 minutes, stirring occasionally.

          Make the Herb Dumplings:

            - In a mixing bowl, combine the flour, baking powder, and salt. Mix well.

              - In a separate bowl, whisk together the melted butter and milk. Slowly add this mixture to the dry ingredients, stirring until just combined. Fold in the chopped herbs until evenly distributed.

                Dumpling Cooking:

                  - Once the chicken stew has simmered for 20 minutes, remove the bay leaf. Using a spoon, drop heaping tablespoons of the dumpling mixture onto the surface of the simmering stew. Cover the pot and let the dumplings cook for an additional 15 minutes without lifting the lid. This will ensure they steam perfectly.

                    Serve:

                      - After the dumplings have cooked, check that they are fluffy and cooked through. Serve the chicken and herb dumplings hot, garnished with extra fresh herbs if desired.
