Homemade Zucchini Pizza

2 medium-sized zucchinis

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (or pizza sauce)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis and cut them in half lengthwise. Carefully scoop out a small portion from the center of each half to create a boat shape, leaving enough flesh at the bottom to hold the toppings. Sprinkle a little salt on the cut sides and let them sit for about 10 minutes to draw out excess moisture.

      Pat Dry: After 10 minutes, use a paper towel to pat the zucchini halves dry to remove the salt and moisture.

        Season the Zucchini: In a small bowl, mix together the garlic powder, dried oregano, dried basil, red pepper flakes, salt, and pepper. Rub this seasoning mix onto the cut sides of the zucchini.

          Add Sauce and Cheese: Spoon a generous amount of marinara sauce into each zucchini half. Top with shredded mozzarella cheese and sprinkle some grated Parmesan on top.

            Bake the Zucchini Boats: Place the zucchini halves on the prepared baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbling and golden brown, and the zucchini is tender but not mushy.

              Garnish and Serve: Once baked, remove from the oven and let cool for a minute. Garnish with fresh basil leaves if desired. Cut into smaller pieces or enjoy as is!
