Holiday Cranberry & Sweet Potato Bake

2 large sweet potatoes, peeled and cubed

1 cup fresh or frozen cranberries

½ cup brown sugar

1 tablespoon maple syrup

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

2 tablespoons unsalted butter, melted

½ cup chopped pecans or walnuts (optional)

Zest of 1 orange

2 tablespoons orange juice

Instructions
 

Preheat the oven: Start by preheating your oven to 375°F (190°C).

    Cook the sweet potatoes: Place the cubed sweet potatoes in a large pot, cover them with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.

      Mash the sweet potatoes: In a large mixing bowl, mash the sweet potatoes until smooth. Stir in the brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mix well until fully combined.

        Add cranberries: Gently fold in the cranberries, orange zest, and orange juice until they are evenly distributed throughout the sweet potato mixture.

          Prepare the baking dish: Lightly grease a 9x9 inch (or equivalent) baking dish with melted butter. Spread the sweet potato and cranberry mixture evenly in the dish.

            Add nuts (optional): If using, sprinkle the chopped pecans or walnuts over the top of the sweet potato and cranberry mixture for added crunch and flavor.

              Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the cranberries are tender and the top is slightly golden.
