For the Cake:

1 cup rolled oats (blended into flour)

1 cup almond flour

1 cup unsweetened Greek yogurt

4 large eggs

1/2 cup honey or maple syrup

1/4 cup unsweetened almond milk

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

For the Cinnamon Swirl:

2 tablespoons coconut sugar or brown sugar

1 tablespoon ground cinnamon

1 tablespoon olive oil or melted coconut oil

For the Topping (optional):

1/4 cup chopped walnuts or pecans

A sprinkle of powdered sugar or a drizzle of your favorite icing

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or line it with parchment paper.

    Prepare the Cake Batter: In a large mixing bowl, whisk together the blended rolled oats, almond flour, baking powder, baking soda, ground cinnamon, and salt. In another bowl, combine the Greek yogurt, eggs, honey or maple syrup, almond milk, and vanilla extract. Mix until smooth.

      Combine the Mixtures: Gradually add the dry ingredients to the wet ingredients while stirring until just combined. Do not over mix.

        Make the Cinnamon Swirl: In a small bowl, mix the coconut sugar (or brown sugar), ground cinnamon, and olive oil until it resembles a wet paste.

          Assemble the Cake: Pour half of the batter into the prepared cake pan. Evenly spread the cinnamon swirl mixture on top. Then, pour the remaining batter over the swirl, spreading it gently to cover.

            Create the Swirl Pattern: Using a butter knife or skewer, gently swirl the batter to create a marble effect, being careful not to over-mix.

              Add Optional Toppings: If using, sprinkle the chopped walnuts or pecans on top of the batter for added crunch.

                Bake: Place the cake in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. When ready to serve, you can sprinkle with powdered sugar or drizzle icing for an extra touch.
