Herb Crusted Pork Loin with Apples

2 to 3 lbs pork loin

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 cup fresh herbs (such as rosemary, thyme, and parsley), finely chopped

4 cloves garlic, minced

1 tablespoon kosher salt

1 teaspoon black pepper

2 apples (such as Honeycrisp or Granny Smith), cored and sliced

1 cup low-sodium chicken broth

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon cinnamon

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pork Loin: Pat the pork loin dry with paper towels. In a small bowl, mix olive oil, Dijon mustard, minced garlic, salt, pepper, and chopped herbs to form a paste.

      Apply the Herb Crust: Rub the herb mixture all over the pork loin, ensuring it’s evenly coated. Place the pork in a roasting pan.

        Add Apples: Arrange the apple slices around the pork loin in the roasting pan.

          Make the Flavorful Liquid: In a separate bowl, mix the chicken broth, apple cider vinegar, honey, and cinnamon. Pour this mixture gently into the roasting pan, making sure it doesn't wash off the herb crust.

            Roast the Pork: Cover the roasting pan with foil (shiny side facing down) and bake for about 1 hour. After 1 hour, remove the foil and continue to roast for an additional 20-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
