1/2 cup powdered sugar

1/2 teaspoon salt

1 cup unsalted butter, softened

1 teaspoon vanilla extract

1 egg yolk

1/2 cup fruit jam (raspberry, strawberry, or your favorite flavor)

1/4 cup granulated sugar (for dusting)

Instructions
 

Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix dry ingredients: In a medium bowl, whisk together the flour, powdered sugar, and salt until well combined.

      Cream butter and sugar: In a large bowl, using a hand mixer or stand mixer, beat the softened butter until creamy. Gradually add the powdered sugar mixture and beat until light and fluffy.

        Add egg yolk and vanilla: Mix in the egg yolk and vanilla extract until fully incorporated.

          Combine wet and dry: Slowly add the flour mixture to the butter mixture, mixing on low speed until the dough comes together. It should be soft and slightly sticky.

            Chill the dough: Place the dough in the refrigerator for about 30 minutes to firm it up.

              Roll out dough: Once chilled, take the dough out and roll it out on a lightly floured surface to about 1/4 inch thick.

                Cut cookies: Use a heart-shaped cookie cutter to cut out cookies. For half of the cookies, cut out the center with a smaller heart cutter to create a window for the jam.

                  Bake cookies: Place the cookies on the prepared baking sheet and bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

                    Add jam: After removing the cookies from the oven, let them cool slightly. For the cookies with the cut-out centers, place a teaspoon of jam on the whole heart cookies and gently place the cut-out cookies on top.

                      Dust and finish: Sprinkle the tops of the cookies lightly with granulated sugar for a sweet finish. Allow them to cool completely before serving.
