Ingredients

1 cup diced pineapple

1 cup diced mango

1 cup diced kiwi

1 cup strawberries, hulled and sliced

1 cup blueberries

1 medium banana, sliced

1/4 cup shredded coconut (unsweetened)

1/4 cup chopped fresh mint leaves

2 tablespoons honey or agave syrup (optional)

Juice of 1 lime

Instructions

Prepare the Fruits: Start by washing all the fruits thoroughly. Peel and dice the pineapple, mango, and kiwi into bite-sized pieces. Hull and slice the strawberries, and slice the banana just before assembling to prevent browning.

Mix the Ingredients: In a large mixing bowl, combine the diced pineapple, mango, kiwi, sliced strawberries, blueberries, and banana. Gently toss them together to mix without mashing the fruits.

Add Flavor: Drizzle the honey (or agave syrup) over the fruit mixture for added sweetness if desired. Squeeze the juice of one lime over the fruits to enhance their flavor and give an extra zing.

Incorporate Coconut and Mint: Add the shredded coconut and chopped mint leaves to the fruit mixture. Carefully fold them into the fruit salad to keep the pieces intact.

Chill and Serve: Let the fruit salad sit for about 10-15 minutes in the refrigerator. This will not only chill the salad but also allow the flavors to meld together beautifully.

Presentation: Serve the fruit salad in individual bowls or a large serving dish. Garnish with additional mint leaves or a sprinkle of coconut for that festive touch.
