Ingredients

4 boneless, skinless chicken thighs

1 cup pineapple juice

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 tablespoon freshly grated ginger

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper, to taste

1 cup shredded carrots

1/2 cup diced green onions

Fresh cilantro, for garnish

Cooked rice or quinoa, for serving

Instructions

Marinate the Chicken: In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, sesame oil, and crushed red pepper flakes. This marinade will add a sweet and tangy flavor to your chicken. Add the chicken thighs to the bowl, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high on the stovetop. Lightly oil the grill grates to prevent sticking.

Cook the Chicken: Remove the chicken thighs from the marinade, letting the excess drip off. Season with salt and pepper. Place them on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

Glaze the Chicken: During the last couple of minutes of grilling, brush some leftover marinade onto the chicken for extra flavor. Be sure to discard any marinade that has been in contact with raw chicken.

Assemble the Dish: Once cooked, transfer the chicken to a plate and let it rest for about 5 minutes. Slice the chicken and serve it over a bed of rice or quinoa. Top with shredded carrots, diced green onions, and fresh cilantro for a burst of color and flavor.

Enjoy: This Hawaiian BBQ chicken is perfect for summer BBQs or a tropical-inspired dinner at home. Pair it with a refreshing salad or grilled vegetables for a complete meal.
