Ingredients
  

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

3/4 cup warm water

2 tablespoons olive oil

1 cup roasted Hatch green chiles, chopped

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Fresh cilantro, for garnish

Instructions
 

Prepare the Dough: In a large mixing bowl, whisk together the flour, baking powder, and salt. Slowly add the warm water and olive oil, mixing until a dough forms. Knead for about 5 minutes on a lightly floured surface until smooth.

    Rest the Dough: Cover the dough with a damp cloth and let it rest for 30 minutes. This will help make it easier to roll out.

      Shape the Flatbread: Once rested, divide the dough into 4 equal portions. Roll each portion into a ball and then flatten to form rounds about 1/4 inch thick.

        Preheat the Pan: Heat a non-stick skillet or griddle over medium-high heat. You can lightly grease it with a bit of olive oil if desired.

          Cook the Flatbread: Place one flatbread in the hot skillet and cook for about 2-3 minutes until bubbles form on the surface and the bottom is golden brown. Flip and cook for another 2-3 minutes. Repeat for all flatbreads, keeping them warm in a clean kitchen towel.

            Add the Toppings: Once all flatbreads are cooked, place them back on the skillet or a baking sheet. Evenly distribute the chopped Hatch green chiles over the top of each flatbread. Sprinkle with mozzarella and feta cheese, and season with garlic powder and onion powder.

              Melt the Cheese: If using an oven, preheat to 400°F (200°C) and bake the flatbreads for about 5-7 minutes until the cheese is melted and bubbly. If continuing on the skillet, cover the skillet with a lid for a couple of minutes until the cheese is melted.

                Garnish and Serve: Remove the flatbreads from the skillet or oven. Garnish with fresh cilantro before serving. Enjoy them warm as an appetizer or main dish!
