1 cup Hatch green chilies, diced (roasted and peeled for best flavor)

1 cup Monterey Jack cheese, shredded

1/2 cup cream cheese, softened

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

1/4 tsp smoked paprika

12-15 small corn tortillas

1/4 cup vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, diced Hatch green chilies, Monterey Jack cheese, cream cheese, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix thoroughly until the ingredients are well combined.

    Soften Tortillas: To prevent the corn tortillas from cracking, warm them up. You can do this by microwaving them in a damp paper towel for 30 seconds or heating them in a dry skillet for 15 seconds on each side.

      Assemble Taquitos: Take one warmed tortilla and add 2-3 tablespoons of the chicken mixture along one edge. Roll it tightly, ensuring no filling spills out. Repeat with the remaining tortillas and filling.

        Fry the Taquitos: In a large skillet, heat the vegetable oil over medium heat. Once hot, add the taquitos seam-side down in batches (do not overcrowd). Fry for about 2-3 minutes on each side, until golden brown and crispy.

          Drain and Serve: Remove the taquitos from the skillet and place them on a paper towel-lined plate to drain excess oil.
