Hatch Chili Chicken Snack Wraps

2 cups cooked chicken, shredded (can use rotisserie chicken)

1 cup Hatch green chilies, roasted and diced (fresh or canned)

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup sour cream

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 large flour tortillas or wraps

1 cup lettuce, shredded (romaine or iceberg)

1 medium tomato, diced

Fresh cilantro, for garnish (optional)

Instructions
 

Prep the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, roasted Hatch green chilies, cream cheese, cheddar cheese, sour cream, lime juice, garlic powder, cumin, smoked paprika, salt, and pepper. Mix until well combined. Adjust seasoning to your taste.

    Prepare the Tortillas: Lay out the flour tortillas on a clean flat surface. If desired, you can warm them up slightly in a dry skillet to make them easier to roll.

      Assemble the Wraps: Spread a generous amount of the chicken mixture onto the bottom half of each tortilla, leaving some space around the edges. Top with a handful of shredded lettuce and diced tomatoes.

        Roll It Up: Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with all tortillas.

          Optional Grilling: If you want a crispy exterior, heat a skillet over medium heat, and cook each wrap seam-side down for about 2-3 minutes per side, or until golden brown and crispy.
