Harvest Vegetable Flatbread Pizza

1 large store-bought or homemade flatbread

1 tablespoon olive oil

1 cup fresh spinach leaves, washed and dried

1 cup butternut squash, peeled and thinly sliced

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

½ cup crumbled feta cheese

½ cup shredded mozzarella cheese

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Balsamic glaze (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Vegetables: In a mixing bowl, combine the sliced butternut squash, red onion, cherry tomatoes, olive oil, salt, pepper, and thyme. Toss until the vegetables are evenly coated.

      Roast the Vegetables: Spread the vegetable mixture evenly on a baking sheet. Roast in the preheated oven for about 15-20 minutes or until the squash is tender and starting to caramelize, stirring halfway through.

        Assemble the Pizza: While the vegetables are roasting, place the flatbread on a baking sheet or a pizza stone. Once the vegetables are done, remove them from the oven and spread the fresh spinach leaves evenly over the flatbread.

          Add Toppings: Layer the roasted vegetables on top of the spinach. Sprinkle the crumbled feta and shredded mozzarella cheese over the top.
