1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

2 cups frozen hashbrowns, thawed

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese (optional for extra cheesiness)

¼ cup green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 5 minutes). Season with salt, pepper, and paprika. Remove from heat.

      Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture, cream of mushroom soup, sour cream, and thawed hashbrowns. Gently fold in 1 cup of shredded cheddar cheese, reserving the rest for topping.

        Transfer to Baking Dish: Spread the mixture evenly into a greased 9x13 inch baking dish.

          Add Cheese and Bake: Sprinkle the remaining cheddar cheese (and mozzarella if using) on top. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and golden brown.
