6 large eggs

1 cup diced cooked ham

1 cup shredded sharp cheddar cheese

1/2 cup diced bell pepper (any color)

1/4 cup diced onion

1/4 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1 tablespoon chopped fresh parsley (for garnish)

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). If you're using muffin liners, place them in a muffin tin; if not, spray the muffin tin well with cooking spray.

    Prepare the Mixture: In a large mixing bowl, crack the 6 eggs and whisk them together until well blended. Add the milk, garlic powder, onion powder, black pepper, and paprika (if using) and whisk again until all the ingredients are combined.

      Add the Fillings: Gently fold in the diced ham, shredded cheddar cheese, bell pepper, and onion into the egg mixture until evenly distributed.

        Fill the Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. This will allow room for the muffins to rise as they cook.

          Bake: Transfer the muffin tin to the preheated oven and bake for 18-20 minutes, or until the muffins are puffed up and a toothpick inserted in the center comes out clean.

            Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Carefully remove the muffins and place them on a wire rack to cool slightly. Garnish with chopped fresh parsley if desired.

              Enjoy: Serve warm or at room temperature. These muffins can be made ahead of time and stored in an airtight container in the fridge for up to 5 days. They can also be frozen for longer storage!
