Ingredients

1 cup rolled oats

1 scoop vanilla protein powder (your choice)

1 medium ripe banana

1/2 cup cottage cheese or Greek yogurt

1/2 cup almond milk (or any milk of choice)

1 teaspoon baking powder

1 teaspoon vanilla extract

Pinch of salt

1 cup mixed berries (blueberries, strawberries, raspberries)

Cooking spray or a little coconut oil for the waffle maker

Instructions

Blend the Oats: In a blender or food processor, blend the rolled oats until they are a fine flour consistency.

Combine Ingredients: In the same blender (or a mixing bowl if you prefer), add the protein powder, ripe banana, cottage cheese or Greek yogurt, almond milk, baking powder, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and well combined.

Fold in Berries: Gently fold in the mixed berries to the batter. If you like your berries whole and chunky, be careful not to overmix.

Preheat Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions and lightly grease it with cooking spray or a hint of coconut oil.

Cook the Waffles: Pour the batter into the preheated waffle maker, using about 1/2 cup of batter for each waffle. Cook until the waffles are golden brown and crisp, usually about 5-7 minutes, depending on your waffle maker.

Serve & Enjoy: Carefully remove the waffles and serve hot with your favorite toppings. Options include a drizzle of honey, a dollop of Greek yogurt, or a sprinkle of extra berries.
