Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 cup black beans, drained and rinsed

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (adjust to taste)

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley, chopped (for garnish)

Optional: avocado slices and lime wedges for serving

Instructions
 

Prep Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are fork-tender and lightly browned. Remove the sweet potatoes from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Toss in the diced onion and bell pepper, and sauté for 5-6 minutes until they become soft and translucent. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Cook Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Season with ground cumin, smoked paprika, chili powder, salt, and pepper. Cook for about 8-10 minutes, stirring occasionally, until the turkey is cooked through and no longer pink.

        Combine Ingredients: Once the turkey is fully cooked, return the sweet potatoes to the skillet along with the black beans. Stir everything together until well mixed and heated through, about 3-4 minutes. Adjust seasoning as necessary.

          Serve: Remove the skillet from heat. Garnish with fresh cilantro or parsley. Serve hot with avocado slices and lime wedges on the side, if desired.
