Grilled Zucchini Salad

4 medium zucchinis, sliced into 1/4-inch thick rounds

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped

2 tablespoons balsamic vinegar

1 tablespoon lemon juice

1 teaspoon honey

Preheat the Grill: Heat your grill to medium-high (about 400°F/200°C). If you’re using a grill pan, preheat it on the stovetop over medium-high heat.

    Prepare the Zucchini: In a large mixing bowl, toss the sliced zucchini with olive oil, salt, and pepper until evenly coated.

      Grill the Zucchini: Place the zucchini slices on the grill (or the grill pan) in a single layer. Grill for about 3-4 minutes per side, or until they have nice grill marks and are tender. Remove from the grill and let cool for a few minutes before chopping into bite-sized pieces.

        Mix the Salad: In a large salad bowl, combine the grilled zucchini, cherry tomatoes, and red onion.

          Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, lemon juice, honey, and a pinch of salt and pepper until well combined.
