Ingredients

2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup fresh mozzarella balls (bocconcini), drained

2 large tomatoes, sliced into 1/4-inch thick rounds

1/4 cup fresh basil leaves

3 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

Instructions

Prepare the Zucchini: Preheat the grill to medium-high heat. Slice the zucchinis into rounds and lightly brush each side with olive oil. Season with salt, pepper, and Italian seasoning if using.

Grill the Zucchini: Place the zucchini slices on the grill and cook for about 3-4 minutes on each side until they develop nice grill marks and are tender but still firm. Remove from the grill and set aside.

Stack the Ingredients: On a serving plate, start stacking the layers. Begin with a slice of grilled zucchini, then add a slice of tomato, a mozzarella ball, and a basil leaf. Repeat this process until you have 3-4 layers, finishing with a zucchini round on top.

Drizzle and Serve: Drizzle the stacks with balsamic glaze and a little extra virgin olive oil for flavor. Add more fresh basil as a garnish if desired.

Enjoy: Serve immediately as an appetizer or a light main dish, and enjoy the delightful combination of fresh ingredients!
