Ingredients

4 cups fresh watermelon, diced

2 tablespoons honey or agave syrup

1 teaspoon lime juice

1 cup heavy cream

1 cup sweetened condensed milk

1 teaspoon vanilla extract

Pinch of sea salt

Fresh mint leaves for garnish

Instructions

Preheat the Grill: Start by preheating your grill to medium-high heat.

Prepare the Watermelon: In a bowl, toss the diced watermelon with honey and lime juice until evenly coated.

Grill the Watermelon: Place the coated watermelon on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the watermelon becomes slightly caramelized. Remove from grill and let it cool.

Blend the Watermelon: Once cooled, transfer the grilled watermelon to a blender. Blend until smooth and set aside.

Mix the Ice Cream Base: In a large mixing bowl, combine the heavy cream, sweetened condensed milk, vanilla extract, and a pinch of sea salt. Whip the mixture until soft peaks form.

Combine: Gently fold the pureed grilled watermelon into the whipped cream mixture until fully incorporated.

Chill: Pour the mixture into an airtight container and freeze for about 4-6 hours, or until firm.

Serve: Scoop the grilled watermelon ice cream into bowls or cones. Garnish with fresh mint leaves for a pop of color and added flavor.

Enjoy: Dig into this refreshing and unique treat at your next summer gathering or simply as a delightful dessert!
