Grilled Veggie & Hummus Pitas

2 medium zucchinis, sliced into rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 red onion, cut into wedges

1 cup cherry tomatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 cup hummus (store-bought or homemade)

4 whole wheat pita pockets

Fresh parsley, chopped (for garnish)

Optional: Feta cheese, crumbled for topping

Instructions
 

Preheat the Grill: Heat your grill or grill pan over medium-high heat until hot.

    Prepare the Veggies: In a large bowl, combine the zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes. Drizzle them with olive oil, and sprinkle with garlic powder, dried oregano, salt, and pepper. Toss to evenly coat.

      Grill the Vegetables: Once the grill is hot, place the mixed vegetables directly on the grill. Grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and let cool slightly.

        Warm the Pitas: While the veggies are grilling, you can warm the pita pockets on the grill for about 1-2 minutes, just until they become soft and pliable. Be careful not to overcook them.

          Assemble the Pitas: Spread a generous amount of hummus on the inside of each warmed pita pocket. Stuff with the grilled vegetables, ensuring an even mix of all the colorful veggies.

            Garnish and Serve: If desired, sprinkle the stuffed pitas with chopped fresh parsley and crumbled feta cheese. Serve immediately and enjoy the vibrant flavors!
