Ingredients

4 (6 oz) swordfish steaks

1/4 cup extra virgin olive oil

Juice and zest of 2 large lemons

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon salt

1/2 teaspoon black pepper

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Instructions

Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice and zest, minced garlic, chopped rosemary, thyme, salt, and black pepper until well combined.

Marinate the Swordfish: Place the swordfish steaks in a shallow dish or zip-top plastic bag. Pour the marinade over the steaks, ensuring they are all evenly coated. Cover (or seal the bag) and refrigerate for at least 30 minutes, up to 2 hours for deeper flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If you're using a grill pan, heat it on the stovetop until it's hot.

Grill the Swordfish: Remove the swordfish from the marinade, allowing excess to drip off. Place the steaks on the grill and cook for about 4-5 minutes on each side, or until they are opaque and easily flake with a fork. The internal temperature should reach 145°F (63°C).

Rest and Serve: Remove the swordfish from the grill and let it rest for about 3 minutes. Serve with lemon wedges and garnish with fresh parsley. Enjoy your zesty grilled swordfish!
