1 pound large shrimp, peeled and deveined

2 ripe peaches, pitted and cut into wedges

2 tablespoons olive oil

2 tablespoons honey

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh basil leaves for garnish (optional)

Skewers (soaked in water if using wooden skewers)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the olive oil, honey, smoked paprika, garlic powder, salt, black pepper, and lemon juice. Add the peeled and deveined shrimp to the marinade and mix well to coat. Let it marinate for at least 30 minutes in the refrigerator.

    Prepare the Peaches: While the shrimp is marinating, prepare the peaches. Cut them into wedges, ensuring that each piece is large enough to hold on a skewer without falling apart.

      Assemble the Skewers: Once the shrimp has marinated, take the skewers and alternate threading shrimp and peach wedges. For a colorful presentation, alternate each piece—start with shrimp, then a peach wedge, followed by another shrimp, and continue until the skewer is filled. Aim for about 3-4 shrimp and 2-3 peach wedges per skewer.

        Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates with a little olive oil to prevent sticking.

          Grill the Skewers: Place the skewers on the grill and cook for approximately 2-3 minutes on one side. Carefully flip the skewers and grill for another 2-3 minutes until the shrimp turns pink and opaque, and the peaches are slightly caramelized.

            Serve the Skewers: Once cooked, remove the skewers from the grill. Let them rest for a minute, then garnish with fresh basil leaves if desired.
