4 Italian sausages (chicken, turkey, or pork)

2 bell peppers (red and yellow), cut into strips

1 medium zucchini, sliced into rounds

1 medium red onion, sliced into wedges

1 cup cherry tomatoes, halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

4 large pieces of aluminum foil (about 12x12 inches)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat (about 400°F/200°C).

    Prepare the Sausage: In a skillet over medium heat, cook the sausages for about 5-7 minutes until they are browned on the outside but not fully cooked through. This will help them develop flavor before they are grilled with the veggies.

      Mix the Veggies: In a large bowl, combine the bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, add minced garlic, oregano, smoked paprika, salt, and pepper. Toss well to coat all the vegetables evenly.

        Create the Packets: Lay a piece of aluminum foil on a flat surface. Place a portion of the veggie mixture in the center, and then top it with one sausage. Fold up the sides of the foil to create a closed packet, ensuring it's sealed tightly to hold in steam and flavor. Repeat for the remaining ingredients.
