4 Italian sausages (pork or chicken)

1 medium zucchini, sliced into half-moons

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 small red onion, sliced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Aluminum foil

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

    Prepare the Foil Packs: Cut four large squares of aluminum foil, approximately 12x12 inches each.

      Prep the Sausage: In a skillet over medium heat, cook the sausages for about 5-7 minutes, turning frequently until they are browned but not fully cooked through. Remove from heat and set aside.

        Combine Veggies: In a large mixing bowl, combine the sliced zucchini, diced bell pepper, halved cherry tomatoes, sliced red onion, and minced garlic. Drizzle with olive oil, and sprinkle with oregano, smoked paprika, salt, and pepper. Toss everything together until the vegetables are evenly coated.

          Assemble the Packs: Divide the vegetable mixture among the four pieces of foil. Slice each sausage into 3-4 pieces and evenly distribute the sausage pieces over the veggies.

            Seal the Foil Packs: Fold the edges of each piece of foil over the ingredients, creating a sealed pocket. Make sure there are no holes for steam to escape.

              Grill the Packs: Place the foil packs on the grill over direct heat. Grill for about 20-25 minutes, turning them halfway through for even cooking. The veggies should be tender and the sausages cooked through.
