For the Grilled Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced

½ red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (adjust for spiciness)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Prepare the Marinade: In a small bowl, combine olive oil, garlic powder, smoked paprika, salt, black pepper, and lime juice. Whisk until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Turn to coat evenly. Let them marinate for at least 30 minutes or up to 1 hour in the refrigerator.

      Make the Pineapple Salsa: In a medium bowl, mix together the diced pineapple, red onion, red bell pepper, minced jalapeño, and cilantro. Squeeze the lime juice over the mixture, add a pinch of salt, and toss to combine. Set aside to let the flavors meld.
