Grilled Portobello Mushrooms

Ingredients
  

4 large Portobello mushrooms

4 tablespoons balsamic vinegar

4 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Optional: slices of fresh mozzarella cheese for topping

Instructions
 

Clean the Mushrooms: Gently wipe the Portobello mushrooms with a damp cloth to remove any dirt. Remove stems and gills using a spoon for a cleaner look.

    Create the Marinade: In a bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried thyme, smoked paprika, salt, and pepper until well-combined.

      Marinate the Mushrooms: Place the cleaned Portobello mushrooms in a shallow dish and pour the marinade over them. Ensure each mushroom is well-coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more intense flavor.

        Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are ashen and hot.

          Grill the Mushrooms: Remove the mushrooms from the marinade (reserve the marinade for basting) and place them on the grill, gill-side down. Grill for about 5 minutes, then flip them over.

            Baste and Cook: While grilling, baste the gill side with the reserved marinade. Grill for an additional 5-7 minutes, or until they are tender and have nice grill marks.

              Optional Cheese Topping: If using fresh mozzarella, place a slice on each mushroom during the last minute of grilling. Close the grill lid to melt the cheese slightly.

                Serve: Once grilled to perfection, remove the mushrooms from the grill. Garnish with fresh parsley before serving.
