Grilled Portobello Mushroom Burgers

4 large portobello mushroom caps

1/4 cup balsamic vinegar

1/4 cup olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

4 whole grain burger buns

4 slices provolone or mozzarella cheese

1 cup fresh spinach or arugula

1 large tomato, sliced

1 avocado, sliced

Optional: mustard or aioli for topping

Instructions
 

Prepare the Marinade: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, paprika, salt, and black pepper until well combined.

    Marinate Portobello Caps: Place the portobello mushroom caps in a shallow dish or a large resealable plastic bag. Pour the marinade over the mushrooms, ensuring they are well-coated. Let them marinate for at least 30 minutes, preferably up to 2 hours in the refrigerator.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it on the stove over medium heat.

        Grill the Mushrooms: Remove the mushrooms from the marinade and discard the leftover marinade. Place the mushroom caps on the grill, stem side up, and grill for 5-7 minutes on each side, or until they are tender and have nice grill marks.

          Add Cheese: During the last couple of minutes of grilling, place a slice of cheese on top of each mushroom cap to melt.

            Toast the Buns: While the mushrooms are grilling, slice the burger buns in half and lightly toast them on the grill for 1-2 minutes, cut side down, until golden brown.

              Assemble the Burgers: On the bottom half of each toasted bun, place a grilled portobello mushroom cap with melted cheese. Top with fresh spinach or arugula, a slice of tomato, and avocado. Add mustard or aioli if desired, then place the top half of the bun.

                Serve: Serve your grilled portobello mushroom burgers warm and enjoy with your favorite side dish, like sweet potato fries or a fresh salad.
