Grilled Peach Burrata Toast

4 slices of crusty sourdough bread

2 ripe peaches, halved and pitted

8 oz fresh burrata cheese

2 tbsp olive oil

1 tbsp balsamic glaze

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

Sea salt, to taste

Freshly cracked black pepper, to taste

Microgreens or arugula, for garnish (optional)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan on the stovetop, heat it over medium heat.

    Prepare the Peaches: Brush the cut side of the peach halves lightly with olive oil. This will help them caramelize and prevent sticking on the grill.

      Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 4-5 minutes until grill marks appear and they become slightly softened. Remove from the grill and let them cool slightly.

        Grill the Bread: In the same way, brush the sourdough slices on both sides with olive oil. Grill for 2-3 minutes on each side or until they are toasted and have nice grill marks.

          Assemble the Toast: On each grilled slice of sourdough, tear or scoop a generous portion of burrata and place it in the center.

            Add the Grilled Peaches: Slice the grilled peaches into wedges and arrange them around or atop the burrata.

              Season and Garnish: Drizzle the balsamic glaze over the toast, sprinkle with fresh thyme leaves, and season with sea salt and freshly cracked black pepper to taste.
