Grilled Peach BBQ Chicken

4 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

1 cup BBQ sauce (homemade or store-bought)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

Fresh basil or cilantro for garnish (optional)

Prep the Chicken: In a medium bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts to the bowl and toss them until evenly coated. Let them marinate for at least 30 minutes (or up to 2 hours) in the refrigerator for deeper flavor.

    Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If you are using a grill pan, heat it over medium-high heat on the stovetop.

      Prepare the Peaches: While the grill is heating up, slice the halved peaches lightly with a knife to make small crisscross cuts (this helps them caramelize better). Lightly brush the cut sides with a bit of olive oil.

        Grill the Chicken: Once the grill is hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F. In the last few minutes of cooking, brush the BBQ sauce generously over both sides of the chicken.

          Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 3-4 minutes, or until you see nice grill marks and the peaches have softened slightly. Remove them from the grill and set aside.
