250g Halloumi cheese, sliced into 1 cm thick pieces

4 cups fresh watermelon, diced (seedless if possible)

1 medium cucumber, thinly sliced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

2 tablespoons fresh mint leaves, chopped

2 tablespoons olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Optional: Arugula (for serving)

Prep the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill pan, lightly oil it to prevent sticking.

    Grill the Halloumi: Once the grill is hot, place the sliced Halloumi on the grill. Cook for about 2-3 minutes on each side, until golden brown and crispy. Remove from the grill and set aside.

      Mix the Salad Ingredients: In a large bowl, combine the diced watermelon, cucumber slices, halved cherry tomatoes, sliced red onion, and freshly chopped mint leaves. Toss gently to mix all ingredients without crushing the watermelon.
