Grilled Corn Salad with Feta & Basil

4 large ears of fresh corn, husked

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/2 red onion, finely chopped

1 cup crumbled feta cheese

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Juice of 1 lime

Preheat the Grill: Preheat your grill to medium-high heat.

    Grill the Corn: Place the husked corn directly on the grill. Grill for about 10-12 minutes, turning occasionally until all sides are charred and the corn is tender. Remove from the grill and let it cool.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, lime juice, salt, and pepper until well combined. Set aside.

        Cut the Corn: Once the corn is cool enough to handle, stand each ear upright on a cutting board and carefully cut the kernels off the cob with a sharp knife.

          Combine Ingredients: In a large mixing bowl, combine the grilled corn, cherry tomatoes, cucumber, red bell pepper, red onion, feta cheese, and chopped basil.

            Dress the Salad: Pour the dressing over the salad mixture and gently toss everything together until well coated.

              Serve: Taste and adjust seasoning as desired. Garnish with additional basil leaves if desired. Serve the salad chilled or at room temperature.
