4 ripe ears of corn, husked

1 cup ricotta cheese

1 tablespoon olive oil

Zest of 1 lemon

1 tablespoon fresh lemon juice

1 teaspoon honey (optional)

Salt and freshly ground black pepper, to taste

1/4 cup fresh basil leaves, chopped

1 small red chili, finely chopped (optional, for a kick)

4 slices of hearty bread (e.g., sourdough or ciabatta)

Balsamic reduction, for drizzling (optional)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill and char for about 10-12 minutes, turning occasionally to ensure even cooking. Remove from the grill and let cool.

    Prepare the Ricotta Spread: In a bowl, mix the ricotta cheese with olive oil, lemon zest, lemon juice, honey (if using), a pinch of salt, and freshly ground black pepper. Stir until well combined and creamy.

      Chop the Corn: Once the grilled corn is cool enough to handle, use a sharp knife to cut the kernels off the cob. In a separate bowl, combine the corn with chopped basil leaves and red chili (if using).
