For the Grilled Chicken:

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

For the Pesto:

2 cups fresh basil leaves

1/3 cup pine nuts (or walnuts)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup extra-virgin olive oil

Salt and pepper to taste

Juice of 1/2 lemon

For the Zoodles:

4 medium zucchini

1 tablespoon olive oil

Salt and pepper to taste

Garnishes:

Cherry tomatoes, halved

Fresh basil leaves

Additional grated Parmesan cheese

Instructions
 

Marinate the Chicken:

    - In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

      Prepare the Pesto:

        - In a food processor, combine basil leaves, pine nuts, grated Parmesan, minced garlic, lemon juice, salt, and pepper. Pulse until combined. Gradually add olive oil while blending until smooth. Taste and adjust seasoning if necessary.

          Grill the Chicken:

            - Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 165°F (75°C). Remove from grill and let it rest for a few minutes before slicing.

              Make the Zoodles:

                - While the chicken is grilling, spiralize the zucchini into noodles using a spiralizer or a julienne peeler. In a large skillet, heat olive oil over medium heat. Add zoodles, season with salt and pepper, and sauté for about 2-3 minutes until just tender. Avoid overcooking; they should still have some crunch.

                  Assemble the Bowls:

                    - In each serving bowl, place a generous portion of zoodles. Top with sliced grilled chicken and drizzle with the freshly made pesto. Add cherry tomatoes and garnish with additional basil and Parmesan cheese.
