1 cup red cabbage, shredded

1 large apple, julienned (preferably a crisp variety like Honeycrisp)

1/4 cup shredded carrots

1/4 cup unsweetened Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

1/4 cup chopped walnuts (optional)

Fresh parsley for garnish
