Greek Yogurt Chicken Salad Wraps

2 cups cooked chicken breast, shredded or diced

1 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup cucumber, diced

1/4 cup red bell pepper, diced

1/4 cup feta cheese, crumbled (optional)

1 teaspoon dried dill weed

Salt and pepper to taste

4 large whole wheat or spinach wraps

Fresh lettuce leaves (for wrapping)

Fresh herbs (parsley or dill, for garnish)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, Dijon mustard, lemon juice, dill weed, salt, and pepper. Mix until well incorporated to create a creamy dressing.

    Add the shredded cooked chicken, celery, red onion, cucumber, red bell pepper, and feta cheese (if using) to the bowl. Stir until all the ingredients are evenly coated with the yogurt dressing.

      Taste the mixture and adjust the seasoning with more salt, pepper, or lemon juice if desired.

        Lay out the whole wheat or spinach wraps on a clean surface, placing a few fresh lettuce leaves in the center of each wrap.
