Golden Spiced Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

1 tablespoon lemon juice

4 whole wheat or spinach wraps

1 cup fresh spinach leaves

1/2 cup diced cucumbers

1/2 cup shredded carrots

1/2 avocado, sliced

1/4 cup plain Greek yogurt or tzatziki (for dressing)

Fresh cilantro or parsley, for garnish

Instructions
 

Prepare the Chickpeas: In a medium mixing bowl, mash the drained chickpeas lightly with a fork, leaving some whole for texture.

    Season the Chickpeas: In a small bowl, combine olive oil, cumin, coriander, turmeric, paprika, cayenne pepper (if using), salt, and pepper. Mix well and pour this seasoning mixture over the mashed chickpeas. Add lemon juice and stir to combine everything evenly.

      Cook the Chickpeas: Heat a non-stick skillet over medium heat. Add the seasoned chickpeas and cook for about 5-7 minutes, stirring occasionally, until they are heated through and slightly crispy.

        Warm the Wraps: While the chickpeas are cooking, warm the wraps in a separate dry skillet for about 30 seconds on each side or microwave them for about 10 seconds just to soften.

          Assemble the Wraps: Place one wrap on a plate. Spread a generous dollop of Greek yogurt or tzatziki in the center. Top with a handful of spinach leaves, a portion of the spiced chickpeas, diced cucumbers, shredded carrots, and avocado slices.

            Wrap and Serve: Fold in the sides of the wrap and roll it tightly from the bottom up to secure all the filling. Repeat with remaining wraps. Slice them in half diagonally for easy eating and garnish with fresh cilantro or parsley.
