2 cups fresh broccoli florets, chopped finely

1 cup sharp cheddar cheese, grated

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup diced onion

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1 tablespoon fresh parsley, chopped (optional for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

    Blanch the Broccoli: Bring a small pot of water to a boil. Add the chopped broccoli florets and blanch for about 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to an ice bath to stop the cooking process. Once cooled, drain again and chop finely.

      Mix Ingredients: In a large mixing bowl, combine the blanched broccoli, sharp cheddar cheese, breadcrumbs, Parmesan cheese, eggs, diced onion, minced garlic, Dijon mustard, salt, black pepper, and paprika. Mix well until all ingredients are thoroughly combined.

        Form Bites: Using your hands or a cookie scoop, form the mixture into small bite-sized balls (about 1-2 inches in diameter) and place them on the prepared baking sheet. Ensure they are spaced about 1 inch apart for even baking.
