1 medium butternut squash, peeled and diced

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon dried thyme (or 2 teaspoons fresh thyme leaves)

1 cup goat cheese, crumbled

1 cup ricotta cheese

2 teaspoons honey (optional)

1 pre-made pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: In a bowl, toss the diced butternut squash with olive oil, salt, pepper, and thyme. Spread the squash evenly on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized. Let it cool for a few minutes.

      Make the Cheese Mixture: In a mixing bowl, combine the goat cheese and ricotta cheese. Stir in honey if you desire a touch of sweetness. Season with a pinch of salt and pepper.

        Roll Out the Dough: On a lightly floured surface, roll out the pie crust into a large circle, about ¼-inch thick. If using pre-made crust, you can simply unroll it.

          Assemble the Galettes: Transfer the rolled dough to a parchment-lined baking sheet. Spoon the cheese mixture onto the center of the dough, leaving about a 2-inch border. Top with the roasted butternut squash, then fold the edges of the dough over the filling, pleating as needed to create a rustic look.
